You don't need an expensive Rib Roast to serve up a moist and tender Roast Beef from the grill. Our simple grilling technique uses Beef Rub, searing, roasting at a high temperature for the first 45 minutes, and then cooked "low and slow" for about additional 2 hours. That is a REALLY dull knife. If you use a nice sharp boning knife you can leave a thin layer of fat over the whole thing without digging into the meat.

Beer adds a deep, rich flavor to some things. But if you want to stay away from alcohol or just don't like the flavor beer adds, try sub'ing about the same amount of Dr Pepper soda. If they don't sell Dr Pepper in your area, order some online. It will be worth it. You can get a similar flavor from half Coca-cola and half apple juice. If you find you are burning things cause the sugar level in pop is too high, reduce the pop and add more apple juice until you get the right blend.

A. you get to play with real fire. 2. You get flavor. You "taste the meat not the heat" with gas since it imparts 0 (except maybe a metallic flavor that people don't like). The point of grilling is to get the light smoky flavor of the coal. D. You control the amount of coals and the placement of the coals so you control the heat. With gas you get a sort of hot side and indirect heat side, if you want to monkey with knobs all day. 7. You can turn your char grill into a smoker. 'nuff said

If you ain't gonna use charcoal you might as well just cook your meat under the broiler in your oven. Same thing as cooking it with gas. A gas grill just heats things up. You could do 99% of your gas grill cooking on your stovetop in a pan if all you want to do is get some cheap hamburger and heat it up. Charcoal (preferably lump charcoal instead of briquettes since they make less ash and generally aren't full of weird chemicals) takes a little more effort but the rewards are greater.
