actually this kind of noodle is just popular in southeast part of china like canton or HK. i love the types of noodles made in Northern or western part of china, "ramen"is one kind of them. They are more traditional "Chinese noodle". try some of them if u travel to china, its the "real noodle". delicious :)

That's because it "Indo-chinese" so it's not authentic Chinese as you know it but more an mixture of influences from China into whatever country of origin that person is from. So in this case, India!
