http://www.allnigerianrecipes.... stew is often confused with Egg Omelette. Both are not quite the same. Yes they are both made with the same ingredients, just not in the same quantities. Oh you can eat anything with egg stew! And you love your oil in Egusi but hate it here? Way to go! Anyway, the oil in Egg Stew is important so that the egg will "cake" well and the tomatoes won't be squashed. You can pour out the excess oil before serving. :) kio7826 (November 30, 1999 at 12:00 am)

If the eggs can "cake" well with less oil then go for it. Yea we Naijas really need to learn how to use less oil but with some recipes, we need the excess oil to get them look right.
