| Dutch Baby Pancake Recipe

Julie shows you how to make this great breakfast treat, in about the same amount of time it takes to brew coffee.INGREDIENTS:1 cup all-purpose flour1/4 tsp salt1/4 tsp orange zest2 tbl sugar6 large eggs1 cup milk1/4 tsp vanilla extract (How to make Vanilla Extract)3 tbl unsalted butterPowdered sugar, for servingMethod:Pre-heat oven to 425°F. Place a large cast iron fry pan in the oven to preheat, at least 5 minutes.Combine flour, salt, and orange zest in a large bowl and whisk; set aside. Combine eggs, milk, and vanilla in a separate bowl and whisk well. Make a well in the centre of the flour mixture, pour in the egg mixture, and mix.Remove the skillet from the oven and add the butter. Once the butter melts, pour the batter into the skillet and bake in the oven until puffed and golden brown on the sides, about 20 minutes. Remove from the oven and serve immediately with a sprinkling of powdered sugar.

I love a Dutch' baby; I often order them at the Original pancake house in the Chicago west burbs. So delicious. I'd love to try this recipe but I'm wondering do you have to use a cast iron skillet? Looks simple and delicious! I first tried a dutch baby at an Original Pancake House in Birmingham. I also used fresh squeezed lemon juice in addition to the powdered sugar. Yeah... It's not 'Dutch' as in Netherlands Dutch - but rather an American bastardization of the word 'Deutsch'. The recipe is derived from the German Apfelpfannkuchen, with changes along the way to reflect that it's really an American recipe now. radiofreakkk (November 30, 1999 at 12:00 am)

I made one this morning. Added a tsp. of cornstarch in the dry mix, just for fun. Also added 1/4 tsp. grated lemon zest.It was deliciouso!
