Every year around the middle of November Sinterklaas is coming to The Netherlands, bringing lots of gifts and candy. This predecessor of good old Santa is still going strong in these parts of the world, even if his helpers are a bit dubious...The tradition comes with lots of baked goods, one of the more popular being "pepernoten", a cookie like kind of confectionery. They are often mistaken for "kruidnootjes", a smaller and "browner" version. In this video there are recipes for both varieties.BreadLab found an ancient recipe, involving a rising agent that not many of us avid home bakers have worked with; Hartshorn salt (ammonia carbonate). Originally harvested from deer's antlers.
