I went to Diwali (Indian festival) in Toronto one year and they had huge barrels of boiled corn-on-the-cob. The vendor would pull one out and use a wedge of lemon or lime to dampen the length of it, then sprinkle a curry powder on it. I don't know if it was straight up curry or cumin or coriander or a mix, but it was BEYOND awesome.

Yeah I've had elote (pronounced e low teh) in Mexico and they use mayo sometimes as well, and instead of the crumbly cheese, I've only seen it served with parmesan or something similar, and with hot sauce, not cayenne, but this looks like a nice twist.

Yep. You can also boil the corn and then shave it off the cob and toss it together with the other ingredients for a corn salad.

Great stuff and don't mind the haters :) I made your Momofuku style Bo Ssam jalapeno sauce and it was awesome. I didn't care for the scallion ginger sauce but neither did Steph from the momofukufor2 blog. Anyway, I've subscribed so please keep up the good work!
