I'm a sucker for (sighs "processed") Velveta.  So I put velveta on the inside and used sharp shredded on the outside. I about died in heaven. That extra crisp is so amazing. Still need my small pinch of salt on both sides, but amazing idea!! Thanks yet again Chef John!
