I like to run a stalk of celery and 2 green onions through a food processor and add to that tater salad. I crush the boiled eggs with a tater masher. I scatter the hot drained taters, the processed onions, and the mashed eggs on a large plastic tray and sprinkle liberally with Slap Ya Mama Cajun seasoning instead of mustard powder for the zing. I scoop em up and gently lower into a bowl then add in my mayo and sweet pickle relish. Love me some tater salad. Good job Dude.

Hey Michael, I've never drained yogurt and found out that If you drain the yogurt overnight, the texture will be like cheese the next day. Too dense not a good idea as we want the salad to be creamy, not thick as before. Maybe draining it an hour or two would be fine. Not sure. You can experiment! Good luck!

I would think that if you allow the yogurt to drain the day before, everything would be fine.The beets, I know my family would love that idea, I like beets but do not love them and they actually sound good to me in this.Thanks again :-)

Oh please do try them...the yogurt and pink potato salad. If you like the thickness of mayo, then don't put too much yogurt in it. The yogurt can make it watery. Just add enough to make it creamy. As for the beats, cut them into small pieces. Use a few slices (not the whole can!) to change the color of the salad. ;) And I think you should cover your cutting board with foil or something so it won't turn red! lol
