As a test to see if oil is hot enough, test one or two strands to see if they bloom in the oil. if not, wait a bit longer for the oil to heat or you will destroy your noodles!

Thank you - I usually put these on top of or underneath stir fries; but I love your idea of the jalapenos on your chicken, rice and vegie dish - I have to try that - looks delicious :)
