It seems like you have plenty of money given your excellent cookware and nice home, but as a youtube chef you fail miserably. First off, you failed to post the first 10 steps in this "recipe" which was caking your face with makeup to boost your youtube views. Furthermore, this is not even close to authentic chinese food. Maybe you traveled to different parts of China than I did but you don't seem like a very competent cook. In the future I will go elsewhere for my Chinese cooking instruction.

Yeah. But fish sauce is not that commonly used in chinese cuisine? Fish sauce i have seen mostly used in malay, viet, cambodia, laos etc. but not chinese.

Love this recipe, the only thing we found was it was a little too spicy! Trying it again without as much pepper

Sorry for the late reply, I have been busy taking care my sick baby. With this recipe, I would do Dow miu over Kai lan. However it's up to your personal taste. Shaoxing rice wine plus fish sauce is genius, I'll try that next time!
