Great video, I'd like to add that here in Puerto Rico, we usually use Achiote (Annatto) and mix it with the olive oil, therefore making Annatto Oil, which gives the bacalao a nice red-orange colour. Also the "sofrito" she used I believe is actually what we call recaito, which is the base for making Sofrito. If you have recaito and cook it with ham, alcaparrado and tomato sauce, it ends up being "sofrito", and it has more of a reddish-brown hue to it. I would say that for the bacalao depending on how much your family likes to eat i would say a pound of bacalao would feed 3-4 people which is 4-5 1/3 oz for serving, so I would use say 4 pounds of bacalao. On the yuca if you watch my video I used 2 large yucas and that was for me and my husband and we had left overs, so I would say maybe 8 yucas, each yuca feeding 2 persons.I hope this helps you.God Bless,Elba charyd76 (November 30, 1999 at 12:00 am)

I'm Puertorican and know how to do most our food ...but sometimes you just need a reference and YOU ARE IT for me : ) Quick question, how much bacalao should I use for about 11 adults (+ 5 children)?
