Recipes From the Pantry - Blueberry German Pancake
Recipe from Roxy (roxyfur)2 1/2 cups flour2 teas. baking powder1 teas. baking soda2 teas. ground cinnamon2 Tbls. granulated sugar (optional)2 2/3 cups buttermilk1 teas. vanilla extract2 Tbls. vegetable oil2 eggs3/4 cup fresh or frozen blueberries3/4 cup brown suga1 Tbls. ground cinnamonPreheat oven to 350; spray a 13x9 baking dish with cooking spray. In bowl combine first 5 dry ingredients; add buttermilk, vanilla, oil & eggs; stir until well blended with no lumps. (Mix should run off a spoon in a consistent stream but not drip. Add more buttermilk if too thick). Stir in blueberries; pour into baking dish; top with brown sugar and cinnamon. Bake 35 min. or until pick inserted in center comes out clean. Serve hot, with butter and warm maple syrup; serves 12

How in the world did I miss this video?!?!!? Yikes! This looks so yummy! The twins were watching this video with me and Aaron says "Mom, can you make this please.....Mom, look how good that looks.....Mom, please make this" and Drew said "I don't like blueberries but I think I'd like this!" I will have to give it a try!
