please, you have to take contact with the blade while cutting, otherwise it's very dangerous. especially by cutting carotts. One hand should hold the knifes handhold, and the other holds the carrot or whatever you what to cut. Your fingers at this second hand that holds the ingrediant should build a ramp that is in contact with blade and serves you as a guide, but it's absolutely importaint to bend your fingertips like a claw away from the blades cutting edge! That's the only way oft cutting!

I made this today, turned out really well. Made a substitution for chicken. Marinated the chicken in soy sauce (3 tbps) and cornflour (1 tbsp) for about 20 mins. Fried it in the frying pan with a few cloves of garlic and then added the rice noodles and followed this recipe. Turned out really well!Thanks for sharing this recipe!
