| Atkins Diet Recipes: Low Carb Swedish Meatballs (IF*)

This recipe is also in honor of Scandinavian viewers, especially one from Sweden. I asked what a meal she would like low carb, and she replied "Swedish Meatballs." I was happy to comply with her request.This recipe originally came from Alton Brown of Good Eats fame. I had to change a few things from the original, specifically the binder and gravy recipes. I converted it to a pretty good low carb recipe, and even the reported nutrition information at 3.8h net carbs might even be a bit high. One might ask why I used the stand mixer to mix the meat mixture together where others I used my hands or my daughters' hands, but with this recipe, I wanted to hold the meatballs together. Actually a perhaps better alternative solution to cream cheese would be 1/2 tsp of Xanthan Gum -or- 1 egg with 1 cup of cream. Either one of them would work well too. aliciamichael (November 30, 1999 at 12:00 am)
just wondering instead of carbquick use the 3oz brick of cream cheese?
