Great video. I got a craving for ciabatta last night and made this recipe in 3 hrs. Dough was nice and bubbly after rising for 2hrs. Baked for 40mins and when I cut into it I was surprised to see the airy pockets. Surprisingly in 3hrs... it can be done.

Brilliant video, your explanation is very clear (apart from the USA measurements which I need to recalculate in metric...).I am Italian, from Napoli, and we call the end of the bread "cozzetto". The way we would eat it, quickly and delicious, is by scooping a little of the soft part out, sprinkle a little salt and some good quality extravergin olive oil in the cavity, cover again, squash a bit and bite! :)
