I just made this recipe for my family, it was delicious. My local market did not have fresh Sage and I didn't have time to go to another store so I used dry Sage, the sauce was delicious so I thinkk its ok to substitute dry for fresh when you have to. Thanks America's Test Kitchen, you guys are the BEST!
