Mozzarella (Bocconcini) stuffed meatball recipe

This recipe inspired by Lori (AmethystButterflyGrl) !Pasta sauce:6 slices of bacon1 large onion chopped1 cup green or red peppers chopped2 to 4 cloves of garlic mincedsalt and pepper to taste1 cup of mushrooms chopped1 can tomatoes (diced or whole)Fry bacon until crisp, remove from pan. Drain off all but 1tsp of fat.Add onion,peppers, mushrooms, garlic and salt and pepper, add crumbled bacon, saute on medium heat until onions are beginning to get clear and soft. Add the tomatoes and simmer on medium until veggies are soft and tomatoes have broken down a bit.(about 15-20 minutes)Meatballs1 lb of lean or extra-lean hamburger meatabout 20 small cubes of mozzarella cheese or 20 mini bocconcini (deli counter)1/4 cup dried breadcrumbssalt and pepper to taste1/8 cup milk1 lightly beaten eggMix egg,milk, meat, salt, pepper, breadcrumbs in a bowl until blended.Take about an egg sized amount of hamburger mix and press into a round disk shape, put a piece of mozzarella in the middle and press meat around it to make a meatball.Seal edges carefully.Brown meatball in a skillet or in oven or place them directly in the simmering sauce, cover and simmer on low until cookes about 20-30 minutes. Gently turn the meatballs occasionally to cook them evenly.Some of the meatballs may crack and cheese will ooze out.If you figure out how to stop this from happening, let me know.

I buy the jumbo green olives stuffed with mozzarella, then marinated, from our deli here, and stuff those inside a meatball (I also use a mixture of ground beef and Italian sausage for the meatballs.) Even people who don't like green olives usually love these meatballs! (If you can't find the already made stuffed olives, buy the best jumbo green olives you can find, (preferably from Spain), then carefully stuff with mozz, and marinate at least overnight in a homemade Italian vinaigrette.)

Recipes like this are a nice surprise for guests, I think! When I have made them, I've added a link or two of italian sausage to the meatball mixture for a variation. Also, When I make the ball, I simply indent with my thumb, and push in the Bocconcini into the sphere, then close/roll it. It seems to seal a bit better (for me) in this way. Awesome presentation Yoyo!

Yes for oven, 350 F for about 30 minutes, depending on size
