It is yummy and easy to prepare. you can cook the Greek stuffed tomatoes on the stove if you like but you have to add a little more liquid to it. We always include rice or in some cases bulgur in our stuffed vegetables. We don't add rice only when we stuff baby zucchini. I'll upload the video when I find baby zucchini on the market. Many don't like parsley or mint. You just exclude what you don't fancy from the recipe to adjust it to your taste. We do it all the time. Enjoy!Mariette Mcnargin (November 30, 1999 at 12:00 am)
Yummm!! Looks nice! My mom always had eggplants stuffed along with tomatoes and peppers. And she didn't bake them, she cooked them on the stove in a low heat and without adding rice. Have you ever tried stuffing without rice?In Azerbaycan we usually make it without rice, we use rice only for stuffed grape leaves and cabbage.
