if you only have a low powered cooker you can get better results by preheating the wok pan for longer. i preheat my wok on my electric stove for about 10 minutes or more so it gets really hot and sometimes often leave it permanentyl on the stove whilst i am preparing the food so its ready to go. Careful though as it can reflect alot of heat towards the walls. using this techqniue if you pour a boiling kettle of water into the hot wok you blanch vegetable realy well and the water boils rapidly
