the same reason why you put skewer through the whole lamb. electrical oven doesn't exist back them. so people cook on the charcoal fire.

one thing i have always though about kebabs it seems a complete waste of time to take the time and hassle to put all the pices of food onto skewers and then just having to remove them again in order to eat them. Totally pointless. YOur gonna have to remove the food from the skewer anyway. Why even bother placing food onto skewers you are going to have to remove it from in order to eat. what a waste of time
