Mexican Lasagna - RECIPE TYPED OUT BELOW IN DESCRIPTION

Recipe I created for Mexican lasagna using pollo and carne asada as the meat. Each layer consists of tortillas, rice, black beans, corn, onions, garlic, fresh cilantro, tomatoes, green onions, chilies, red, green and yellow peppers. Absolutely delicious. Video shows the how to make the recipe below details the ingredients and amounts. I get a lot of compliments on this, enjoy!!Mexican Lasagna:Ingredients15 tortillas - anykind (throw on grill to give smokey flavor)5-8 cups shredded cheese (mexican blend, cheddar or mix)2 lbs of grilled pollo asada chopped (or see marinade below)2 lbs of grilled carne asada chopped (or see marinade below)1 bunch of green onions chopped2 bunches of cilantro (chop leaves, stop at stems)4 cups of diced fresh tomatoes (or you can use a can of diced)1 cooking onion, or 1 yellow sweet onion chopped1 yellow or red bell pepper chopped (or whatever color you have on hand)3 medium/large size garlic cloves, chopped1 can of black beans (do not drain liquid)1 4oz can of diced green chilies2 cups of frozen or canned corn1 package of Knorr Fiesta Sides Mexican Rice (if your store doesn't carry it, they have a "Spanish rice" and "Taco rice" version you can use instead)Prep:You can purchase the pre-marinated meats at a latin market, Costco, even Trader Joes. Or you can marinade the meats yourself. If so, a marinade recipe is below. Marinade the meat between 4-8 hours, you can even go overnight - 24 hours. You can grill the meat and tortillas the night before, and chop the day of assembly. Chop all other ingredients as directed above.Chicken/Steak Marinade:2 lbs of chicken breast or boneless thighs2 lbs of skirt steak or flank steak2 ziploc freezer bags1/4 cup vegetable oil1/2 cup red wine vinegar (can substitute with white vinegar)1/3 cup lime juice (can substitute with lemon juice)1/3 cup orange juice1 cup water2 tablespoons peeled fresh garlic - crushed1 tablespoons white pepper1 1/2 tablespoons salt1 tablespoon ground cumin1 tablespoon chili powder1/4 teaspoon ground clovesJuice squeezed from 1/2 an orange1/4 bunch cilantro, chopped (no stems)Combine all ingredients in a large bowl and whisk to combine, or just toss in a food processor all together. Divide marinade in half and pour half in chicken bag, the other in the steak bag. Marinade up to 24 hours. Preheat grill to 375, grill meats till cooked through.Black Bean Mixture:Spray bottom of pan with PAM or olive oil. Saute garlic, onion, pepper, and corn over medium/low heat until semi soft and onions are translucent. Make sure garlic does not turn brown or burn, it will create bitter taste. Add tbsp of water if needed. Once cooked, add can of black beans, can of green chilies, simmer on medium/low until all is heated through. Set aside.Mexican Rice:Purchase Knorr "Fiesta Sides" Mexican rice. Available at Ralphs, Vons, or Alberstons on the West coast, and only found at Giant on the East coast. Shoppers does not carry it. Giant also carries another flavor called "Spanish" and "Taco" rice if the Mexican one is not available. Those are good too. Follow package directions to prepare. Set aside.Assembly:Preheat oven 375. Spray bottom of pyrex pan (9x13) with PAM to prevent tortillas from sticking. Cut tortillas in 1/8 triangles, create single layer on bottom of pan. Sprinkle cheese over tortillas, sprinkle cooked chicken, 1/2 of the black bean mixture, 1/2 the rice, 1/3 of the cilantro, 1/3 of the green onions, and 1/3 of diced tomatoes. Repeat tortilla layer and press down to make room for next layer. Sprinkle with cheese, put down cooked/grilled diced steak. Sprinkle remaining bean mixture, remaining rice, and another round of 1/3 cilantro, green onions and tomatoes. Top with another layer of tortillas, press down again. Top with remaining cheese, green onions, cilantro and tomatoes. Cover with foil, heat at 375 for 45 min. Layers consist of all pre-cooked food, the heating in the oven is just to melt the cheese.
