Hi - There are 2 points at which I use the oil. At 4:22 I heat 2 cups of peanut oil in a wok on Med-High. Then once the chicken is cooked at 4:56 I remove all of the oil except for 1 tablespoon and heat that on high. I guess it gets confusing with the writing and the voice; I actually started changing this in my more recent vids. Thank you for watching :) toxicwar (November 30, 1999 at 12:00 am)

Could you substitute shrimp for the chicken?? Does shrimp and peppers go together well enough to eat.
