Hi Laura, i'm italian. You cook the sauce a little bit "the godfather style", except for using merlot wine. Can i suggest the sangiovese wine like chianti, for that?

There are no unsafe bacteria in the mouth. Any natural bacteria in the mouth are fine to be in the stomach (the acid will likely just kill them anyway)

Hi Laura, what kind of taste does the red wine add to the recipe? (e.g. salty? bitter? sweet?). Would it taste similar if it's replaced by the beef broth?
